Hood 5.8% BOIL 60 minutes 1.5 oz Tettnanger 4.4% BOIL 30 minutes 2 oz Saaz 2.6% BOIL 0 minutes 1 Tube White Labs Pilsner Lager Boil Time: 75 minutes Primary Fermentation: 14 days at 54 F Secondary Fermentation: 21 days at 54 F Date Starte 2/8/98 Date Racked 2/22/98 Date Bottle 3/15/98 Add 4.77 gallons of water at 169 F to heat mash to 152 F Sparge with 3.65 gallons of water to yield 5.00 gallons to primary Notes: First Rest at 131 for 30 mins Raise temp to 153 and hold for 60 mins Mash out at 168 for 5 mins Drain First runnings to kettle Gravity 1.072 Batch sparge with 2 gals and Top off to 6.5 Gal FWH with 3/4 oz Saaz Boil 15 mins and start Hop additions as noted Add 1 1/2 tsp rehydreated Irish Moss at 45 mins Cool as low as Possable Let settle for 30 mins Rack to Glass Primary and Pitch Yeast Gravity 1.069 Added about 3/4 gal.
